Just in time for the 'ber months, locally known as the best months to enjoy seafood from the Peconic Bay. The fresh and crisp stainless steel fermented Sauvignon Blanc is here to pair with the sweetest oysters.
We are so excited about the 2017 Migratus barrel aged and fermented Sauvignon Blanc which is now ready to make its debut at the table with the cuisine of late fall. This wine is just starting to hint at its full potential!
2017 Sauvignon Blanc
Our winemaker came home with more than great pictures living and working in New Zealand. After two vintages in Marlborough, the techniques learned were applied to North Fork Sauvignon Blanc to honor the distinctive maritime terroir in which they are grown– here in this place, at this time.

2017 Migratus Sauvignon Blanc
" Migratus (Latin): migrātus (m); Gone away,
having been changed. "
The name, Migratus is in recognition of our winemakers time spent learning and evolving as a winemaker both at home, here on the North Fork as well as time spent in Australia, New Zealand, and California.
Migratus is an old world wine style of aging Sauvignon Blanc in neutral oak creating a white wine with body and the structure to age. This is similar in style to a wine named, Claudia from Vavasour where Robin spent 6 months in 2012 learning about Sauvignon Blanc in its broad range of expression.
Here on the North Fork, utilizing fruit from established vineyards in the best years this wine is the culmination of Robins time spent
Home and Away.
6 Tiny Tasting Rooms on the North Fork
BJ Gamboa stopped into the Peconic Cellar Door last weekend while touring tiny tasting rooms on the North Fork. After a fantastic conversation he had this to say about our new home base.
"The new home of Robin Epperson-McCarthy (Saltbird Cellars) and Alie Shaper (As If Wines, Brooklyn Oenology), Peconic Cellar Door occupies the space that formerly housed Provisions and Ingredients (a specialty market offering things like squid ink pasta and custom panini sandwiches).
Custom tables allow for couples or a few groups of four or may be combined into one long table for a more communal tasting experience.
Bonus feature: Robin or Alie are usually on hand to talk wine. Well-trained and passionate servers are excellent. Speaking directly to the winemakers? Priceless. Peconic Cellar Door, 2885 Peconic Lane, Peconic.

Petulant Wino Bistro & Wine Bar

Tom & Courtney Schaudel have created a haven for the Long Island locavore at the Petulant Wino. Over one (of many) late night harvest dinners Courtney picked up the Saltbird Sauvignon Blanc before it was even bottled. She tasted a tank sample of (mostly) fermented juice and they have been pairing the Sauvy with their favorite menu items ever since.

As small-batch independent producers, we're banding together to showcase our wines for this spring and summer buying seasons.

Now that she is 3 months old and sleeping well, we are getting back into the cellar...
The finishing touches are being ordered for the upcoming bottling. We are so excited for our second vintage!
The 2015 growing season was another fairytale year with high quality. We are looking forward to the 2015 Chardonnay (Stainless Steel Fermented) and the 2015 Migratus (Barrel fermented & aged Sauvignon Blanc).
Another new addition will be the 2014 Harbinger (Merlot & Cabernet Sauvignon blend). We have been patiently waiting for this wine to mature...more information on the new releases coming soon!

Taking Flight
Well, we went and started a new wine brand on the North Fork of Long Island, NY.
This is the ideal time for Saltbird Cellars to take flight. All of the elements are coming together as the North Fork of Long Island AVA has become an established wine region recognized around the world...in a small part because our owner & winemaker traveled around the world telling everyone she could about this unique wine region!
Saltbird Cellars is kicking off the release of our first vintage white wines with a collaborative dinner involving some amazing women from the East End.

Join us August 2, 2015 at Browder's Birds Farm to experience a night of local wine and locally sourced cuisine prepared by the ladies of Hampton's Aristocrat. Saltbird Cellars wines were crafted to pair with East End cuisine and this promises to be a night of fine dining on the rustic fields of the North Fork.
